Artisan Chocolate Granola

Granola, elevated for the serious chocolate lover. 
My Artisan Chocolate Granola is everything I wish the grocery-store stuff was: clusters of slow-baked oats with real European cocoa, a whisper of fleur del sel sea salt, and a sprinkle of premium chocolate chips. Crunchy bits of heaven! ❤️

Eat it by the handful (no judgment). Spoon it over Greek yogurt. Crown your morning smoothie bowl. Or—my personal favorite—sneak a few clusters straight from the jar at 3pm when the day needs rescuing.

Ingredients: 
* 3 cups old-fashioned oats
* 1 1/2 cups raw nuts of choice (I used slivered almonds and pecans)
* 3TBSP Callebaut or other alkalized cocoa powder
* 1/2 cup maple syrup
* 1/2 cup coconut oil
* 1 tsp vanilla extract
* 3 packets of sugar in the raw (can be omitted if watching sugar intake)
* ½ tsp sea salt (I use fleur de sel)
* 3/4 cup chocolate chips (54.5% Callebaut or premium brand - sprinkle after baking)

Mix the oats, nuts, cocoa, sugar in the raw and salt. Stir in the maple syrup, coconut oil, and vanilla until everything's coated. Pour onto a lined sheet pan.
Bake at 325°F for 40-50 min, stirring every 20 minutes.
Right after removing from oven, sprinkle with chocolate chips. Let it sit for a minute to melt and then stir again.
Let it cool completely (usually at least 2 hours).
