Triple Chocolate Chip Cookies

Ingredients
- 10 tsps of butter (1/2 cup plus 2 tsp)
- 1/2 cup brown sugar
- 1/2 cup white sugar
- 1 egg
- 2 tsps vanilla
- 1/4 cup cocoa powder
- 1 1/2 cup flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp sea salt
- 3 ounces of chopped milk chocolate
- 3 ounces of 50-60% dark chocolate
- 1 cup (8 oz) good quality semi-sweet chocolate chips
Instructions
- Allow butter to soften at room temperature
- Cream butter and sugars until well blended - about 5 minutes
- Add egg and vanilla to butter/sugar mixture and blend 2-3 minutes
- Heat about 2 tablespoons of water and add cocoa powder until blended
- Then add liquid cocoa mixture to the wet ingredients and blend until well incorporated
- Add remaining dry ingredients and blend for just a minute until mixed thoroughly but don’t over mix
- Stir in chocolates
- Form into round balls of desired size (3 to 3.5 oz each for medium size) or use a cookie scoop of desired size for more round uniform cookies
- Chill in freezer or refrigerator at least 2 hours
- When ready to bake, preheat oven to 350F and bake 16-18 minutes
- Allow to cool about 15 minutes

For true gourmet bakery style results and the best flavor, use a good-quality chocolate such as Callebaut, Guittard, or any of the Belgium chocolate bars from Trader Joe’s. Trust me, it makes even a simple recipe taste more luxurious.
Storage
Store in an airtight container for 2-3 days - if that last that long!
